Inspired by the Japanese Gyuto, this knife is a great all-purpose shape with an double-bevel convex grind and an aggressive swedge grind k-tip for detailed cuts. Hand-forged from 10 series High Carbon steel, Heat-treated for strength and triple-tempered for flexibility. Handle material varies by availability but is always carefully selected for its beautiful grain. Available in hardwood, stabilized wood, hybrid burl, and canvas micarta (recommended for harder use and production kitchens).  Happy to accommodate custom requests.
